About our sources

Our rules

1. Every requirement carries its own citation: the GI specification registered with the Ministry of Agriculture, the brand association, the prefecture or city, or the agricultural cooperative
2. Source URLs and access dates are stored in the data and shown on every page
3. Nothing is taken from guides, round-ups or online shops
4. When primary sources disagree, we record both and mark it as disputed
5. Each page lists only the sources it actually uses
6. If the official source sets no requirement, we write "Not set" rather than guess
