Sent to Kyoto City Central Wholesale Market No. 2 and judged to meet a set meat quality [P007] Produced by member farms of the Kyoto Prefecture Swine Producers' Council [P008] |
Pork is graded under the Japan Meat Grading Association’s pork carcass standard, in five grades: Gokujō (極上), Jō (上), Chū (中), Nami (並) and Tōgai (等外, substandard). The same standard applies regardless of breed, age or sex. Pork grading (pork carcass standard) →
The prefecture's page (P007) describes the feed only as “barley, bread crumbs and the like, for at least 60 days before shipment”, without the 30% figure, and says only “a set meat quality” for grading. We follow the figures in the PDF of the council's rearing rules (P008). The PDF's “195 days as a guide” and “110 kg shipping weight as a guide” are guidelines, so we do not list them as conditions.

About the names
Brand names are proper nouns. English names follow the brand association's official English page first, then the English name in the GI register, and otherwise romanised Japanese plus "Beef", "Wagyu" or "Pork". We never call a non-Wagyu brand Wagyu.
